Lukschen Kugel

I made Lukschen Kugel tonight as I have been craving it for a while and after this post, I thought it was only fair that I share the recipe and the meal with y'all.

Here are the noodles in a bowl soaking in the liquid.

Here is the final meal, I added salmon and some leftover green beans that I re-heated to finish it off.











Here is the recipe.
Apricot Kugel
8 oz. boiled medium noodles, well drained
ADD:
3/4 stick of margerine. Mix until margerine is melted
BLEND TOGETHER:
4 oz cream cheese
3 eggs, beaten
1 c. apricot nectar
1/2 c, sugar
1 c. milk
1/2 tsp. vanilla extract

Add noodles to cream cheese mixture. Mix well. Pour into 9" x 11" baking dish.

TOPPING:
1 c. crushed corn flakes (or cereal)
1/4 c. sugar w. cinnamon

Spread topping over noodles mixture in baking dish.

Bake 45 minutes @ 350 degrees. Remove from oven & cover w/ foil. Let stand 1/2 hour before uncovering.

Kugel worth traveling for! Thanks for sharing the visuals. Here I sit in Albany, drooling and longing.

That sounds so... undlady-like as my mother would say!

I have tried so very much to like kugal, and it is just one of those things that doesn't work for me. I think it is because my brain doesn't want to combine noodles with sweetness, the same way I can't wrap my brain around cucumber ice cream, which I have actually tried, by the way. My noodle sweetness objection is foolishness, I realize because noodles are really just, you know, dough, which is what bread is, and I like bread with sweet things.

That, or I have just had really bad kugel, which is entirely possible.
